Sand in/all over the food, food dragged all over the tank, one kind of food missing (I have never found some things still).

Trust me, DO NOT leave banana over night in the food dish! Food becomes moldy when the humidity in your tank is too high. If the humidity is over 80% your food will mold much more than if it is in the 70-79% range. I can leave banana, zucchini, eggplant, fresh shrimps, any fresh food really overnight (up to 24 hours straight in the tank) without mold issues. So the food itself isn't the cause for mold - the mold grows because of too high of humidity levels.
