Harvest now

It is getting to be that time of the year...here in Colorado at least, it is getting cold. The luxurious leaves are starting to turn colors, so it is time to harvest and dry or freeze leaves that won't be available through the winter. I like to get all of the green leaves that I can because they are fullest in color enhancing properties. The yellow, red, and orange leaves are also nutritious but lack the chlorophyll that the green ones have.
